While working as a model in NYC, Christophe Carron missed the delicious galettes he ate growing up in Toulouse, France. Not finding the thin, buckwheat ("sarrasin") pancakes filled with savory meats, eggs, and cheeses anywhere in the city, Carron opened Délice & Sarrasin to instant acclaim in summer of 2015.

High in protein, vitamins, and naturally gluten-free, galettes gourmandes are paper-thin and light, thanks to buckwheat sourced specially from Brittany, France. These make the perfect base for gourmet fillings such as smoked salmon, shrimp, avocado puree, and egg (Mr Petrossian) or kale, mushrooms, bacon, creme and cheese (Mr Chambray).

Then, it's time for a sweet crepe, a sheet of white flour pancake folded around tempting combinations like melted dark chocolate, strawberry jam, and whipped cream (La Francinette). Purists will love classics like La Lolotte (bananas, dark chocolate, cream) and La Suzette (crepe flambe with orange, lemon & sugar).
