The acclaimed Executive Chef Nicolas Frezal cites the sunny French Mediterranean coast as his inspiration for dishes like the Canard aux Figues (pan seared Hudson Valley duck breast, confit fritter, glazed daikon, fig) and the Coquilles St. Jacques Roties (Maine diver scallops, saffron fennel, black olive chimichurri).
