From long days in his uncle’s Neapolitan restaurant to helping his mother craft fresh pasta by hand, he developed an unwavering respect for seasonal ingredients and the care required to transform them into something extraordinary. After immigrating to America at just 21, Ronca refined his craft in New York’s most authentic Italian kitchens, serving as Executive Chef at Palma, Chef de Cuisine at Bellavitae, and Manager of Food & Wine at Caffé Torino.
Today, Chef Ronca is a celebrated culinary force — a champion of Chopped, a collaborator with the James Beard Foundation, and the creator of his signature Buffalo Ricotta Cheesecake, twice recognized by Food & Wine as one of the top cheesecakes in America. In 2018, he opened his second restaurant, Rafele Rye, bringing refined Italian cuisine to picturesque Westchester County and earning the coveted Bib Gourmand distinction from the Michelin Guide — a testament to his dedication to excellence, authenticity, and heartfelt Italian flavor.
Back in the West Village, Chef Ronca’s namesake gem, Rafele, captures the soul of southern Italy in the heart of Manhattan.
