Chef Gonzalo Colin is behind the magic, having fine-tuned his talents with time spent under three-time New York Times-starred Chef Scott Bryan of Veritas and Apiary, and award-winning celebrity chef, Chef Sam De Marco.
The tacos are equal parts gourmet and drool-worthy. Hand-crafted tortillas are the base of creations like the Chicken Taco with grilled chicken, crisp lettuce, fresh tomatoes, cliantro; not to mention the Pork Belly with charred pineapple, pickled red onion, and habanero sauce. TABÚ brings a fresh perspective on Mexican cuisine to Brooklyn, using locally sourced ingredients and authentic techniques to craft bold, contemporary dishes.
Chef Gonzalo Colin’s journey began in a home where food was a sacred language, a blend of French refinement & Mexican roots. He began as a Garde Manger at Indigo under Chef Scott Bryan, and his skills deepened at Merge and First with Chef Sam De Marco. Later, at Frankie & Johnnie’s and Sequoia, he refined his approach. A pivotal chapter came through his work with Ark Restaurants Corp. and legendary chef David Waltuck.
From leading the kitchen at City Bistro in Hoboken to orchestrating culinary experiences at Robert Restaurant above the Museum of Arts and Design, Gonzalo has consistently translated memory and heritage into fine dining. His ventures as founder and chef at Kahlo and Arre Sinaloa are heartfelt tributes to Mexican culture, bold, soulful, and deeply personal.
