This heavenly cake that honors the Three Kings was created for the bishop of Amiens in 1311. Pulling out the fève was serious business that allowed a court lady to truly become the queen for a day, until the French Revolution, when the royal cake was renamed "the Galette of Equality."

At FIAF's Annual Galette des Rois Celebration, this indispensable cake that has been shared through French history is once more enjoyed in the company of fine friends. The presiding pastry chef this year will be Dominique Ansel, who has been awarded the James Beard Award and the Ordre du Mérite Agricole for his achievements in gastronomy - including the invention of the world-famous Cronut®.

Add to this freely flowing libations by Romilly Cidre, from the Romilly Farm that began raising apples by the order of the Emperor Charlemagne in the 9th century. Made from 25 varietals of heritage apples, Romilly Cidre expresses the complexity of a fine Bordeaux, the elegance of Champagne, and the crisp freshness of a vine-ripened apple.
