Generally accepted amongst both parties is Shinka Ramen, helmed by Chef Waki Ng and his 20 years of Japanese cooking, plus time spent as sous-chef for Morimoto's Momosan. His philosophy is that every bowl begins with the careful selection of superb ingredients. Called a "noodle treasure trove" by TimeOut, this Bowery gem pleases even the most judicious of palates.
Begin with the Bone Marrow, Pulled Beef Ribs, and Steamed Boa Buns starter, generously stuffing the fluffy, melt in your mouth boa with its carnivorous accoutrements.
