To start, try the Aguachile Verde (cucumber, burnt onion), a ceviche of fresh red snapper and scallop with a hint of buttery sweetness. Move on to the Gorditas de Chicarron Presando filled with Duroc pork and melted guajillo Oaxaca cheese, or the Flautas de Pollo (crisp tortilla flutes of grilled chicken topped with house-made sour cream, crumbled cheese, lettuce, salsa verde).
