Earning a Michelin Star during his time at Kōsen, Executive Chef Wei Chen brings over 20 years of expertise to the table, showcasing a mastery in the art of sushi-making. His journey began in 2005, with training at numerous prestigious Michelin-starred establishments in New York & Asia, including foundational training in Kyoto, Japan.

Using divinely fresh cuts primarily sourced directly from Japan and prepared in the more modern Edomae style, delight in Otsumami such as Edamame and Hiyayakko, moving on to brilliant presentations of nigiri, such as Chutoro (medium fatty bluefin tuna), Hamachi yellowtail, and Kinmedai (golden eye snapper), just to name a few.

Michelin-starred Chef Wei Chen joined Sushi Masu in late 2024. Since 2005, he honed his craft while training at several prestigious Michelin-starred establishments in New York, Asia, and Kyoto. Chef Chen's commitment has shaped his career, and he went on to earn a coveted Michelin star during his time in Florida at Kōsen.

Chef Chen embraces a philosophy centered on preserving the natural flavors of ingredients, taking inspiration from the changing seasons. He carefully selects the finest fish, sourced directly from Japan to ensure the highest quality in every dish. For the omakase adventure, each dish will showcase his skill and intuition.

The process is a delicate dance of timing and technique. It’s completely immersive, with a seamless flow guiding you through. Expect smaller dishes, called Otsumami to kickstart your appetite.
