The night begins with a cocktail hour featuring a welcome Martingale French 75 or Old Fashioned Cocktail, paired with light appetizers such as Buffalo Cauliflower, Chicken Skewers, Truffle Fries, Chicken Wings, Dips, and Mozzarella Sticks. Here, you'll kickstart your evening with flavor-packed bliss all before diving into the full tasting experience.
The highlight of the evening is the Martingale Deconstruction segment, where you'll sample the four distinct grapes that make up this premium cognac. You'll taste four imported, aged distilled wines (crus) from different grape regions, guided by a tasting mat and curated glasses to help you appreciate each blend's unique profile.

Martingale Cognac made its debut in 2023, born from a family with a long and distinguished history of crafting Cognac for some of the most prestigious houses in the region. Despite their century of experience producing traditional brandy for others, Martingale emerged with a unique and original flavor profile that set it apart in the crowded world of fine spirits.
Founder Guillaume Thomas, alongside Co-Founders Amaury Thomas and Andrew Weir, spent three years experimenting with various blends and expressions to create a cognac that offers a fresher, more fragrant, and refined taste, challenging the conventions of the category. With deep expertise in every aspect of Cognac production - from growing grapes to distilling and aging - the family ensures complete control over the quality of their product.
This hands-on approach allows them to avoid the "standardization" often seen in mass-produced spirits, where artificial ingredients are added to achieve a consistent flavor or appearance. By maintaining this control, Martingale is able to offer a bottles that is truly exceptional, reflecting both tradition and innovation.
