The culinary force behind Michelin-starred Kochi and Mari, Chef Shim brings a modern twist to the traditional steakhouse, fusing Korean and American techniques with seasonal ingredients inspired by his upbringing in Korea’s Jeolla province, a region celebrated for its rich culinary heritage.
Chef Shim’s journey is one of both discipline and creativity. A graduate of the Culinary Institute of America, he refined his craft in some of New York’s most esteemed kitchens, including Le Bernardin, Per Se, Aureole, and Gordon Ramsay, before earning Michelin stars for Kochi and Mari.
Equally impressive is Gui’s drinks program, led by Gelo Honrade, whose decade-long career spans standout bars like Jeepney, Osamil, and Osamil Upstairs.
