"Destined to find a place in the food industry," according to GQ, Chef Franco Noriega grew up savoring fresh, delectable, organic meals as a young swimmer on Peru's national team, with his passion for the industry growing during his subsequent time as a model for brands like Dolce & Gabbana & Hugo Boss.

His interest in the culinary arts deepened with each day, leading him to open Baby Brasa, whose presence in New York City resulted in a buzz-worthy media maelstrom (Food Network, CNN, Cosmopolitan) that has brought his inventive riffs on Peruvian staples into the limelight.

Finding that quality ingredients and traditional techniques truly can thrive in the modern world of cuisine, Noriega takes Seafood Paella and Lomos Saltado to new heights, not to mention the Wild Caught Salmon and its passion fruit reduction sauce - heavenly, one could say.

Lest we forget, the Organic Rotisserie Chicken, aka the national dish of Peru, is browned and cooked to tender perfection, sided with your choice of three accoutrements from fried sweet plantains and jasmine rosemary rice to crispy yucca fries and savory lentils drizzled in a creamy rocoto salsa.
