Agave spirits like tequila and mezcal are a celebration of rich tradition and craftsmanship, each bottle capturing the essence of Mexico's vibrant culture. Made from the agave plant, these spirits come from different regions across Mexico, with tequila hailing primarily from the state of Jalisco and mezcal produced in various areas, including Oaxaca.
The process begins with the harvest of the agave, where the heart of the plant, or piña, is cooked to extract its sugars. For tequila, these piñas are typically steamed in ovens, while mezcal often uses more rustic methods, like roasting in underground pits, giving it its signature smoky flavor. After fermentation and distillation, the resulting spirit is aged in barrels or bottled fresh, offering a spectrum of flavors from earthy and herbal to fruity and sweet.
