When Ryan Cheney was introduced to raw chocolate on a beach in Thailand, it was love at first bite. After spending a year learning the bean-to-bar basics, he teamed up with friend and fellow gastronome Nate Hodge and the pair founded Raaka Chocolate to delight New Yorkers with one-of-a-kind sweets.

Raaka builds each artisan chocolate bar from scratch with single-origin cocoa in its Brooklyn factory. Creative methods range from steaming cacao nibs over simmering red wine and aging cacao in bourbon casks to making bars with whole coconut shreds, smoked chai, or ghost peppers. Raaka always brings out the best in each bean.

Your afternoon starts with a tour that will allow you to see firsthand how beans are transformed into distinctive, delicious chocolate bars. Then, you'll taste raw cacao from around the world and compare unique traits of each growing region.

Following the tasting, you'll be given the opportunity to get creative as you load the factory’s stone grinders with your choice of raw ingredients from the Raaka Innovation Lab. The speed and length of time the chocolate spins determines the particular notes of the chocolate.

Finally, you'll finish by pouring your concoction into molds to create your own bespoke handcrafted chocolate bars.
