Begin your feast with the Essaouria Plate that combines fish, shrimp, and scallops, dusted with ras-el-hanout and grilled with spicy tomato jam. Follow this stellar plate with a lamb tagine that uses honey, prunes, and apricots topped with toasted almonds and a touch of harissa, or the M'hammer that envelopes chicken with red sauce, crispy onion, and nigella.
