Created in 2008 in response to the lack of education around heritage breed pigs, Cochon555 is a nose-to-tail culinary tour dedicated to supporting family farmers and educating chefs and diners about the agricultural importance of utilizing Old World livestock.
This year's Cochon555 winner, Saxone + Parole's Chef de Cuisine Nicole Gajadhar, is having an encore! Join her as she roasts a whole hog at this friendly and elegant Noho restaurant. On the menu, delicious eats including Pork Shoulder Pastrami Egg Rolls, Salt-Cured & Smoked Loin and of course, the Whole Pig with Veggies. Dessert includes a Blood Macaron Chocolate-Caramel Jowl Ganache.
