At her debut restaurant, chef Sakuma draws from her haute pedigree, her Japanese heritage, her farm-to-table inspiration, and her passion for wine and sake - to create an intimate, laid-back, and whimsical dining experience.
To step inside Rabbit House is to discover a true culinary original - a blend of sumptuous and cerebral Spanish gastronomy, and the intimate, artisanal sensibility of Japanese cuisine - all housed in a cozy Lower East Side venue.
With an impressive list of esteemed restaurants on her resume, including the 3 Michelin star Arzak in San Sebastián, Spain, Executive Chef Sakuma has created a welcoming and convivial spot where each guest is treated to the "chef's table" experience.
For an appetizer, try the playful and delicious Tako-Taco (Octopus, Chickpea, Spicy Mayo, Nori Sauce) or the Addicted Spare Rib, marinated overnight with sake and soy sauce for fall-off-the-bones texture.
Chef Sakuma's imagination further shines in the entrees section. Her signature Trapped Rabbit is a tender rabbit involtini rolled around a baby carrot and roasted with guava-balsamic sauce. The Pan Seared Red Snapper (Clam & Broccoli Rabe Salad, Sake Bloody Mary Broth) packs a wonder of tastes & textures, while vegetarians will love the Red Quinoa Pilaf (Shiitake Mushroom, konnyaku-Yam, Bok Choy).
