Tequila and mezcal begins at the very heart of the agave plant, called the piña. This unique, bulbous core is where the magic happens. With tequila, the piñas are carefully steamed in large ovens, a process that draws out the natural sugars and flavors, creating a smooth, refined spirit.
On the other hand, mezcal embraces a deeper, more primal approach, keeping the process closer to its roots. The piñas are roasted in pits dug into the earth, infusing them with a rich, smoky flavor that defines mezcal. This ancient method has been passed down for generations in the Oaxaca region, where mezcal is most closely associated with local culture and tradition.
