Named after the 1920s Parisian model and muse to Paul Poiret, Gaby was built by renowned Paris-based interior designer Pierre-Yves Rochon, who took the historical inspiration and translated it into sophisticated incorporations of vibrant art, rich hues, and New York City's energy - but with a French flair.
The brunch menu is a tribute to the artistic beauty of the restaurant's namesake, bringing Executive Chef Robert Hohmann's 20+ years of experience to the table - he's headed the kitchens of some of Manhattan’s most established hotels, and has also hosted events for Presidents Obama, Bush Junior, Clinton & Bush Senior.
Begin with the famous Fried Green Tomatoes sided with goat cheese and tomato-bacon jam, moving on to pan-seared Day Boat Scallops (sautéed spinach, gingered butternut squash purée) that nod to the sea; aim for the extravagant à la the Parisian ham, Gruyère, and béchamel sauced Croque Madame, served on buttery brioche & topped with sunny side up egg.
