Chez Francis reps a ton of history despite having recently opened. The space itself was originally La Brasserie, and the famed Brasserie Les Halles, which called the late, great Anthony Bourdain its Executive Chef.

It's even still helmed by the same owner Francis Staub, whose position as the founder of Staub cookware gives him ample insight into the culinary industry, especially with the help of hospitality guru Sebastien Muller of Le District & Bar A Vin.
