Chef Augelyn "Augee" Francisco is the brains behind this ingenious concept. Drawing on the success of Binondo's predecessor, Kabisera NYC, Francisco draws on her farm upbringing in the mountainous regions of the Northern Philippines. She also honed her skills under the talented Jean-Georges, Daniel, and Danube alum, Chef King Phojanakong. She was also awarded the Fiesta Empowerment Award in 2024.
Chef Francisco also brought on the brilliance of Chef Elvis Robles. Born in the quiet village of Kinayao in the Philippines, Robles' passion for cooking began in his family kitchen, where he learned by necessity, cooking alongside his mother. His professional journey took off in Bahrain, where he trained & fine-tuned his skills in high-volume kitchens, mastering international flavors and techniques.
Along the way, he earned recognition in culinary competitions, most notably for an award-winning corn soup, and returned to the Philippines. He eventually rose to become an Executive Chef, where his work drew praise from food critics and publications like Time Out. His 15 years of global experience results in a blend of intuitive technique & disciplined execution, leading to a modern take on Filipino cuisine.
The restaurant itself is warm, understated, and thoughtfully designed to let the food take center stage. Clean lines, natural tones, and hanging rattan chandeliers create a calm, inviting scene that feels both contemporary and rooted in tradition.
