Helmed by a veteran of elBulli (the fabled 3 Michelin Starred restaurant in Catalonia), Balvanera shines with an intense light of culinary ingenuity. Chef Fernando Navas showcases his stellar resumé with an intense passion for fusion nosh, infusing each dish with the spirit of the dynamic regions of Argentina.
After completing his culinary training at the Escuela de Gastronomía in Mar del Plata, Fernando set his sights on an international career, starting in Miami. He quickly made his mark at Nobu, and later moved to NYC to join SUSHISAMBA. A life-changing opportunity came when he was selected to work at Ferran Adrià's world-renowned El Bulli in Spain, where only 50 chefs were chosen from over 6,000 applicants.
In 2014, Fernando opened Balvanera on the Lower East Side, showcasing the flavors of Argentina with an inventive, energetic Manhattan spin. Now a world-class chef, he meticulously tests and sources ingredients globally, ensuring they meet his high standards. His success in New York City now extends to the second Balvanera in Pittsburgh, cementing its status as a culinary hotspot of exceptional cuisine.
He brought on Co-Founder Meredith Boyle, a fellow SUSHISAMBA alum who brings more expertise from her time at Duck & Waffle. The lineup also includes Sommelier Nico Martianhes, as well as Head Bartender Jake Manning of Overthrow Hospitality NYC, Con Alma, Lorelei, and Speckled Egg renown.
Taking its name from a historic barrio of Buenos Aires where poets, musicians and creatives once convened, guests will be welcomed by elegance and laid back charm. We went with the empanadas de carne which were nice and crispy. Three of us ended up ordered the huevos a caballo, which came with two sunny eggs, steak, papas, and a chimi sauce. I enjoyed my plato a lot - it was flavorful and juicy, and the papas soaked up the sauce from the eggs and steak. It was delicious. It was more than enough! Overall, we had a great time here and will definitely come back again!"
