From that roaring oven comes blistered, bubbling, beautifully charred pies with pillowy crusts and toppings piled generously on top. Go earthy with the Pizza Funghi, dig into the Pizza Genoa, embrace the creamy decadence of the Pizza Burrata, or keep things salty, savory, and classic with the Pizza Prosciutto.
Then there’s the wine. Art Laboratory has put together a thoughtful list spanning Italy, France, Spain, the United States, and beyond, so whether you’re popping sparkling, pouring something crisp and white, or going for a deep red, there’s plenty worth swirling between slices. It brings together wine, food, art, and community in a way that feels distinctly downtown.
Behind the creative vision is Georgian-born visual artist Giorgi Togonidze, whose work spans textured reliefs, metallic patinas, and immersive décor, including work recently featured at The History Restaurant in Midtown Manhattan. That artistic sensibility runs through the entire Art Laboratory experience, where dinner might unfold alongside a new exhibition, tasting, or creative event.
Of course, there’s plenty happening on the plate and in the glass, too. The wine program travels around the globe, with thoughtfully chosen pours designed for discovery rather than the same-old selections.
