Olnowich's menu is where the magic lives, pulling from Mulholland's South African and Caribbean roots into something that reads global but tastes precise. A Beet Tartare gets brightened with avocado, quinoa, and spiced coconut yogurt on a crisp corn tortilla, while House-Made Potato Chips arrive loaded with crème fraîche, smoked trout roe, and everything bagel spice. Ketchy Shuby is the brainchild of Jamie Mulholland, a South African-born restaurateur who spent formative years in St. Maarten before building a hospitality empire that includes Montauk's beloved Surf Lodge, along with Gold Bar and Cain. Since opening in September 2023 along the border of Nolita and SoHo, Mulholland has channeled both halves of his upbringing into this sanctuary. Even the name carries a story, pulled straight from a Peter Tosh song.

In the kitchen, James Beard Honoree Sean Olnowich serves as culinary director, shaping a menu that reflects Mulholland's global point of view without losing sight of modern American technique. Behind the bar, cocktail director Wayne Gravesande rounds out the concept with a drinks program built to match the food's ambition, equally suited to a slow sip upstairs or a full night of dancing below.

The design tells its own story. Fashion photographer Dimitri Hyacinthe led the vision, blending earthy tones and meticulous detail into something that feels both inviting and enchanting. "Rastrapreneur" Rohan Marley brought authentic island energy to the space, while photographer Lee Jaffe and African surf brand Mami Wata helped shape the aesthetic further. The result is a place anchored by a handcrafted tree with live bark and sprawling branches, its lush greenery and rattan furnishings.

That duality plays out across two distinct floors. Upstairs, the Main Dining Room is all about high ceilings and natural light that shift from casual elegance by day to a warm, amber glow by night. Downstairs, the Lounge takes on a moodier character entirely, with exposed brick, velvet seating, and a dramatic 24-foot bar anchoring a space built for connection. Picture Latin, reggae, and reggaeton beats pulsing under ambient lighting until last call.
