A pioneering presence in plant-based Thai cuisine and boasting locations in New York City, Bangkok, and Chiang Mai, Mai Kaidee's journey began in 1988 in Bangkok with a small street cart tucked into an alleyway in the old city. Here, Owner & Chef Sommay Jaijong developed a repertoire of recipes rooted in traditional Thai cooking. Over time, the humble cart evolved into beloved culinary brand known for bringing authentic Thai flavors to a global palate.

Jaijong was born in Thailand’s northeastern Isaan region, raised on meals shaped by the rhythms of the land. Surrounded by rice fields and vegetable gardens, she developed an early appreciation for fresh ingredients and regional flavors. The cuisine of Isaan became a defining influence on her cooking. These flavors, combined with elements from Central and Southern Thai cuisine, form the foundation of the recipes she created decades ago, many of which remain unchanged today.

Her menu reflects the breadth of Thailand’s culinary traditions while showcasing the creativity. Signature dishes draw inspiration from classic Thai preparations such as green curry with traditional Thai eggplants, bright papaya salads, fragrant noodle dishes, and the rich, comforting Massaman curry. Her recipes highlight ingredients such as galangal, lemongrass, kaffir lime leaves, and Thai basil, bringing together the balance of sweet, sour, salty, and spicy.

New York City became the natural home for May Kaidee’s first US locale, where the city’s diverse culinary landscape acted as a fertile ground for her vision. In addition to being a hub of deliciousness, the spot also dishes up elements of Thai culture through cooking classes, fruit carving workshops, and traditional dance.
