Getting a little saucy is all part of the experience, starting at 7:00pm on Thursday April 23, 2026 at their Chelsea Market outpost.

Grab your $59 Ticket (a $99 value) that gets you a 3 Hour Open Bar from 7:00pm until 10:00pm serving Wines & Beers, as well as 3 Hours to Enjoy A 7 Course Buffet of All-You-Can-Eat Ribs, Plus Sides & Dessert, all prepared by the Dickson's team.

Across a 7 course buffet, the kitchen will showcase ribs in all their glory, spanning beef, pork, and lamb, with a range of cuts from spare and baby back to country-style and kalbi. Each course highlights a different preparation, seasoning, or global influence, turning this into a true tour of rib craftsmanship. Expect everything from DcRib Sliders and Carolina-Style BBQ Spare Ribs to Chinese-Style Riblets and deeply savory Kalbi, each bite a new layer of smoky, sticky, fall-off-the-bone bliss.

You’ll find unexpected standouts like Pastrami’ed Lamb Ribs and Vietnamese Lemongrass Country-Style Ribs, alongside playful, plant-forward twists like Pickled Watermelon Ribs and Corn Ribs. Celebrated by The New York Times and Eater, Dickson’s Farmstand Meats is a whole-animal butcher shop tucked inside the iconic Chelsea Market. They’ve built a loyal following for their commitment to locally sourced, pasture-raised meats from small, sustainable farms across upstate New York, where animals are raised without added hormones, prophylactic antibiotics, or animal by-products.

Their charcuterie program is equally thoughtful, made entirely in-house by their chef and dedicated team. Staying true to tradition and their nose-to-tail ethos, every product is crafted from the same whole animals used for their steaks and chops. Nothing goes to waste here, just carefully prepared cuts that honor both the ingredient and the process behind it.

That same craftsmanship takes center stage at their highly anticipated 2nd Annual Rib Fest, a hands-on, fork-free celebration of all things ribs. Guests are invited to dig in (literally!), while exploring seven courses that span pork, beef, and lamb across a range of cuts and global preparations. Each creation will dish out its own distinct take on this beloved staple.
