Don Ceviche
"Lenin Costas Don Ceviche Little Lenin lived with his grandmother from age eleven to sixteen and often helped her out. His grandmother's restaurant-running routines became second nature to him: "6:00 AM: Wake up, do the potatoes, go to the meat market, come back, and start to do all the bread. Around eleven: the ceviches. So, for me, it was an inspiration, you know?" Lenin, a 16-year-old NYC resident, joined his mother's nanny and housekeeping business in 1995. He quickly found a dishwasher job and rose to top server and manager roles. Don Ceviche, a weekend passion project, opened in 2017 at various markets."
