David Chang, the mega chef known for his Momofuku empire and his own food magazine, Lucky Peach, once drew criticism for refusing to make substitutions or provide vegetarian options. It was all, if you don't like my meat, then stay away. Oh, how times have changed! First, there was the unveiling of his "Impossible Burger," a vegetarian patty that "bleeds" like a meat burger, earlier this year. Then now, in collab with his Lucky Peach colleague Peter Meehan, Chang is launching a cheeky vegetable cookbook Power Vegetables. Ticket price ($38) includes a copy of the book, Q&A with the authors, and beer open bar.
